Creamy pineapple sorbet - YUM!!!

Wow your friends and family with this gorgeous sorbet using only three wholesome ingredients!

Creamy pineapple sorbet

Ingredients:

1 whole pineapple, skin removed and cored, chopped into large chunks
1 tablespoon honey
1/4 cup fat-free half and half

Instructions
1 Add the pineapple chunks to a blender and blend until smooth.
2 Add the honey and half and half and blend until just combined. Pour the pineapple mixture through a fine mesh sieve set over a bowl, pressing on any solids. Place bowl in the freezer for 30 minutes.
3 Using an ice cream maker, freeze the cold pineapple mixture according to the manufacturers recommended instructions. Just before the mixture becomes solid, remove it to a freezer proof dish and freeze for 1 to 2 hours before serving.

Yield 6 Servings

We are celebrating Spring!

Happy Saturday! Happy Pink Saturday! Yay it's the weekend! What are you doing on this gorgeous, sunny weekend? It is sunny and warm here, in Eastern Washington for the first time in a long, long time! It has been a very wet, chilly Spring.

Time to celebrate! We are heading to The Farm Chicks Antique Show today. This show just keeps getting bigger and bigger and we are so darn lucky that it happens right here in our hometown. Hundreds of women travel hundreds of miles just to attend. We drive a very grueling 10 miles to get there! Of course, we stop for coffee on the way just to keep ourselves fueled for the long drive.

We are looking forward to searching for treasures, visiting with friends and hopefully meeting some new ones! Maybe we'll see you there!

Girlfriends, glitter, and tea

As BFF's, and business partners, Shelley and I share a love of soooooooo many things! At the top of our list, only below family, is creating and playing together. Luckily, publishing Mermaids of the Lake provides us many opportunities for doing both!

Recently, we joined with a group of women, dear friends, casual friends, and a few we were looking forward to making our friends. This fun gathering was a creative, Valentine's Day workshop, lunch and tea; a whole day of sipping, eating, and playing with glitter- lots and lots of gorgeous, sparkly glitter!

The creative event was held in the home of Elaine Tolson, of Tinker Verve and Boho Art Retreats. Elaine is a pretty, gracious and lovely host. Her charming home is set in a picturesque rural setting in the woods of Eastern Washington. The 1 1/2 hour drive to Chewelah, WA only added to the fun of the day for us. We were greeted with smiling faces and the fun, girl-energy women create when gathered together for fun and creativity!

Our beautiful and talented teachers were Becky Ellis and Holly Baublitz of All That Glitter. These girls are sparkling glitter queens! Oh, the fun... to have full access to all of the beautiful glitter, vintage papers, old dictionaries, epherma, and a giant box full of bits of old jewels! The Glitter Girls instructed us on useful paper folding techniques and set us loose creating our own beautiful, sparkling banners. The glitter was flying! (poor Elaine!) Girls were chatting and laughing as they played in the supplies like children.

The amazing lunch, prepared by Elaine, was much-needed sustenance after all the energy we used creating! Beautifully arranged and delicious, our choices were many! Finger sandwiches, fruit, croissants, cakes, and cookies; sparkling soda, water, and a beautiful pink punch made an artful display. The table was set with elegant china and tea was served with lunch.

 

 

Gathering with friends, eating, talking, laughing, creating... the kind of warm-fuzzy stuff memories are made of, made for a perfect day!

And... as always we are including chocolate in our giveaway! We chose these amazing, gorgeous milk chocolates by Pixie Dust Chocolates. Yum, yum, yum! They are made right here in Spokane too! Pink Saturday

I have been on vacation for 2 1/2 weeks and we didn't participate in Pink Saturday while I was gone. Glad to be back!

I'm sharing a beautiful pink evening sky. On the last night of our annual family vacation in Northern Wisconsin, the whole famdamily (husband's brothers, their families, friends) jump in our little boats and gather on the lake for one last magical evening of Musky fishing. It always seems to be especially beautiful on our last night and this year was no exception.

Home from vacation

Ahhh... a vacation from vacation. Home! My annual two and a half week trip to Northern Wisconsin was wonderful. As always, this time with family and friends was full of a fabulous mix of tradition, adventure, relaxation, beautiful scenery, laughter, and lots of lots cheese! You know, the stuff memories are made of!
