Perfect Peanut Brittle
1 cup sugar
1/2 cup light corn syrup
1 cup raw peanuts
1/8 teaspoon salt
1 tablespoon butter
1 teaspoon vanilla
1 teaspoon baking soda
Combine first 4 ingredients in 2-quart microwave mixing bowl. Microwave on high for 8 minutes, stirring after 4 minutes. Add butter. Microwave on high 2 minutes. Brittle should not get too brown. Stir in vanilla and soda until light and foamy. Spread on buttered baking sheet as thinly as possible. Cool. Break into pieces.
Note: Try using almonds or macadamia nuts for a fun variety. Or, dip the corner of the pieces in melted chocolate for a real treat.
The Mermaid Shelldropper
- 2 24 ounce cans of pink lemonade concentrate
- 3 cans of water
- 2 cans of Vodka
- 2 Beers
Mix all of the ingredients in a big pitcher, stir in some ice and serve in pretty cocktail glasses. Garnish with a lime wedge, and add a sugar rim if you like.
Be careful, Mermaids aren't pretty swimming on their lips!
Spicy Chocolate Muffins, by Mermaid Debbie
These muffins are slightly sweet, slightly spicy, and kinda sexy!
Spicy Chocolate Muffins are their very best when served warm from the oven, with a dab of butter and raspberry jam. Oh, yum! A cup of coffee or tea would make it a great little afternoon pick-me-up.
Let's get baking!
1 1/2 cups flour
1/2 cup unsweetened cocoa
1/3 cup sugar
3 teaspoons baking powder
1 teaspoon cinnamon
1 dash ground cloves
Mix dry ingredients and set aside. In a smaller bowl, add...
2 eggs slightly beaten
3/4 cup milk
1 teaspoon vanilla
1/4 cup melted butter
Pour over dry ingredients and mix until moist and bumpy.
Lightly grease muffin pan, spoon in mixture, 3/4 full, and bake at 425 degrees for 10 - 15 minutes. Makes 1 dozen muffins.

Chocolate Martini
A favorite "sweet treat" of Mermaid Debbie's- a decadent, delicious Chocolate Martini. Shake up this treat for your sweatheart!
2 ounces vanilla vodka
1/2 ounce chocolate liqueur
1/2 ounce white Creme De Caco
Chocolate syrup to coat rim of martini glass
Pour chocolate syrup on a small plate. Dip rim of martini glass in syrup. Mix all other ingredients in a cocktail shaker with ice and shake, shake, shake! Strain into martini glass. Yummy!

Luscious Lemon Bars, Recipe of Christine Chambers
2 cups of butter or margarine
2 cups of flour
1/2 cup powdered sugar
Cream together. Press into a 13 x 9 inch pan and bake in a 350 degree oven for 15 - 20 minutes.
4 eggs
1/4 cup flour
2 cups sugar
6 tablespoons lemon juice
Beat together. Pour over crust and return to oven for 20 minutes.
Additional powdered sugar
Sprinkle with powedered sugar. Cool before cutting.
Morgan's apple coffee cake, by Mermaid Shelley
Cake:
1 stick plus 2 teaspoons unsalted butter
1 1/2 cups packed light brown sugar
2 large eggs
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup sour cream
1 teaspoon pure vanilla extract
2 cups peeled, cored and chopped apples
Crumble Topping:
1/2 cup packed light brown sugar
1/2 cup all purpose flour
1/2 teaspoon ground cinnamon
4 tablespoons unsalted butter, softened
Brown Sugar Glaze:
1/2 cup packed light brown sugar
1/2 teaspoon vanilla extract
2 tablespoons water
Preheat oven to 350 degrees. Lightly grease 13x9-inch baking dish with 2 teaspoons of the butter.
In a large bowl, cream together the remaining stick of butter and sugar until light and fluffy. Add the eggs one at a time, beating after the addition of each. In a separate bowl, sift together the flour, baking soda, cinnamon, and salt. Add to the wet ingredients, alternating with the sour cream and vanilla. Fold in the apples. Pour into the prepared baking dish, spreading out the edges.
To make the topping, in a bowl, combine sugar, flour, cinnamon and butter. Mix until it resembles coarse crumbs. Sprinkle the topping over the cake and bake until golden brown and set, 35 to 40 minutes. Remove from the oven and let cool on a wire rack for at least 10 minutes.
To make the glaze, in a bowl combine the sugar, vanilla and water. Mix until smooth. Drizzle the cake with the glaze and let harden slightly. Serve warm.
Serves 12

Wow, its a complete meal for me in a whole day.
