I admit it... I love hamburgers, especially home-grilled and loaded with cheese and all the toppings. I don't feel guilty having them every once in a while. But, that's the key: one in a while! Finding something you love that is good for you and that tastes just is good is the choice to make for keeping your resolution to eat better in this new year. If you love burgers like I do, but not the guilt of diving into a greasy double decker, try these black bean burgers as a hearty, healthy alternative to beef hamburgers. Seriously, they are awesome!
Black Bean Burgers
3 16-ounce can black beans, rinsed and drained
1 ½ cups uncooked regular oats
1 medium onion, chopped
2 jalapeno peppers, seeded and chopped
¾ cup fresh cilantro, chopped
2 large eggs, lightly beaten
1 teaspoon salt
¼ cup flour
¼ cup cornmeal
1 tablespoon extra-virgin olive oil
Coarsely mash beans with a fork. Combine beans, oats, onion, peppers, cilantro, eggs and salt. Shape into 8 patties. Stir together flour and cornmeal and dredge patties in mixture. Cook patties in hot oil in a large non-stick skillet over medium-high heat for 5 minutes on each side or until lightly brown. Drain on paper towels. Serve on hamburger buns with condiments of choice.

This sounds pretty good. I wonder if you can freeze the patties? I like a good alternative to a good burger. I had a great burger tonight at a local non-chain restaurant...so tasty. I admit I am behind schedule on my New Year's resolution. This recipe will be a good addition to my February planning!
